Cream Cheese Frosting
3 tablespoons Butter
1/2 package (4 ounces) cream cheese, room temperature
1/2 pound confectioners' sugar, sifted
1 teaspoons vanilla extract
Combine all ingredients in large mixing bowl; beat well until smooth.
I love deserts and a good old fashion carrot cake finishes a day off well.
I found this recipe years ago. It is simple and delicious.
Time: Prep 15 mins
3 Eggs
1 1/2 Cup Vegetable Oil
1 tsp Vanilla
1-8oz can Crushed Pineapple
3 Cups Carrots (shredded)
2 Cup Flour
2 Cups Sugar
2 Tsp Baking Soda
2 Tsp Cinnamon
1 Tsp Salt
Cream Cheese Frosting
Preheat oven to 300 degrees
Combine Eggs, Oil and Vanilla. Beat or Whip until smooth and creamy. Add the remaining ingredients and mix together well. Pour into greased and floured 13 x 8 cake pan.
Bake for 20 minutes at 300 degrees. Increase temperature to 350 and bake for 40 more minutes.
Let cool and frost with a Cream Cheese Frosting.
